Pepper and Onion with Cumin


I don't know why this recipe is so good, but, it is.


Ingredients (organic if possible):


3 red or yellow bell peppers - sliced or diced

1 onion - do whatever you did to the peppers

butter (preferably grass-fed) and extra virgin olive oil

5 cloves of garlic - thinly sliced or finely chopped 

1/2 - 1 tsp. cumin (if you love cumin, as I do, add the larger amount)

1/2 tsp. paprika (plain or smoked)

12" cast iron frying pan


While you are preparing the peppers and onions and garlic, heat the cast iron pan over medium heat.

By the time you are done preparing the vegetables, the pan should be hot.  

Place a pat of butter in the pan and let it sizzle a bit, stir in the peppers, then add a healthy splash of   extra virgin olive oil.

Cook a minute or two, then stir in the onions.  When the peppers and onions are softened and browned in spots, stir in the garlic, cumin, paprika, and salt and pepper to taste.


Eat as is, stir into rice or other grain, use a pizza topping, or frittata filling, or just melt some Kerrygold cheese on top and eat for dinner with some crusty bread and a green salad.
