Cheesy Cauliflower and Broccoli

 

This vegetable combination is anti-oxidant rich and absolutely delicious!  I make a big panful of it and my husband and I eat it for dinner.  I bought the vegetables at Sunden Farms in Old Taappan - the cauliflower and broccoli were absolutely stunningly beautiful and fresh, fresh, fresh!

Honestly, you do not need an exact recipe for this dish, just ingredients and instructions, so here goes:

 

Ingredients:

Extra virgin olive oil

Garlic - chopped

Broccoli - stems chopped, flowerets separated

Cauliflower - separated into flowerets

a handful of grape or cherry tomatoes - halved (not necessary, but they look pretty, add nutrients, and taste great)

Black pepper

A few chopped scallions (also not necessary, but I love them)

Cheese - I used Kerrygold cheddar and Kerrygold blarney castle - grated

(turmeric)

(paprika)

 

I used my favorite 14" cast iron fry pan.  You can use any size pan you wish.

 

Coat botton of pan with olive oil.

Scatter chopped garlic over oil.

Place enough broccoli and cauliflower in pan to come about halfway up the sides.  Scatter a few tomatoes around, and sprinkle with turmeric, if using.

Season with black pepper.

Drizzle with a little (or alot) more olive oil and a couple of tablespoons of water.

Cover and cook over medium heat 12 - 15 minutes, stirring once.  The vegetables should still be firm, if they soften sooner, remove from heat and proceed with recipe.

When vegetables are just beginning to soften, remove from heat.  Sprinkle with scallions and coat generously with the grated cheese.  Sprinkle with paprika, if using.

Turn broiler on to high.

Place pan under broiler and broil 10 - 12 minutes or til cheese is melted and browned in spots.

 

Note:  you can make this dish even more nutritious (and filling) by adding a can of rinsed drained kidney beans or any beans you like - the kidneys look nice.  I know it seems like an odd addition, but it is delicious!  Try it.
