Watermelon Margaritas

For such a simple drink, this margarita is surprisingly delicious.

5 cups chunked, frozen watermelon (about 3 lbs.)

1 C tequila

1/2 C fresh lime juice (about 4 limes)

1/3 - 1/2 C triple sec (the more triple sec, the sweeter the drink)

Blend all ingredients in blender til smooth, pour into margarita glasses, enjoy!

note 1:  the watermelon needs at least 3 hours in the freezer

note 2:  this recipe serves 4 guests - with toppers

Frozen Raspberry Banana Margarita

If you are going to indulge in a cocktail, why not infuse it with vitamins, minerals, fiber and anti-oxidants?   I have also made this drink with equal amounts of strawberries, raspberries and blueberries.  Delicious!!  And good for you, too.  Enjoy (but not too much....:)

2 frozen (over ripe) organic bananas (thick sliced before freezing)

1/2 C frozen organic raspberries

Juice of 1 organic lime

3 jiggers (approx 4 1/2 ozs.) tequila

2 jiggers (approx 3 ozs.) triple sec

1/2 C crushed ice

blend ingredients until smooth

(fresh mint leaves for garnish)

Kefir Smoothie

My freezer is always well stocked with very ripe frozen bananas just so I can make this smoothie or my frozen yogurt custard (that recipe will be coming soon).

For one generous smoothie, or two small ones:

2 very ripe frozen bananas - cut into chunks, to facilitate blending

1 C frozen blueberries or rasberries or a 1/2 C of each - please use organic berries

1/2 tsp. cinnamon

1 tsp vanilla

1C plain kefir

Place ingredients, in order listed, in blender.  Blend till smooth.

note:  if bananas are frozen solid, let them defrost a bit before proceeding or they won't blend properly.

frozen organic peaches - with skin - are also good in this recipe, but again, they must be very ripe

because there is no added sugar, all of the sweetness comes from the fruit.

You may substitue grass- fed whole milk plain yogurt for the kefir, very healthy either way.
