Bean Salad

Sorry, I forgot to take a picture of this salad.  It is very pretty and very healthy.  Add some greenery and some crusty whole wheat bread and you have a complete meal.



1 can organic red kidney beans - rinsed and drained

1 can organic chickpeas - rinsed and drained

1/2 red onion - chopped

1/2 C frozen organic peas

1/2C frozen organic corn

2Tbl. Dijon mustard

1/2C extra virgin olive oil

Black pepper

(chopped tomatoes)

(1/2 tsp. turmeric)

(any fresh herbs)


Mix all ingredients, let sit a bit to allow the flavors to become acquainted, then enjoy!


note:  I do like Shoprite organic beans for this salad, they are never mushy.

          I buy the frozen organic peas and corn from Trader Joe's.
