Apple Crisp



Although sugar is listed in the ingredients, I do not add any sugar to this dish - especially if I am serving it with ice cream, as in the photo.  You may eliminate the sugar altogether, as I do, or add a sprinkling to the apples and add the rest to the topping - less is better!




about 5 C. sliced or chopped apples (4 large apples) - peeled

1/4 C. orange juice 


1/4 C. brown sugar

3/4 C. whole wheat flour

1/2 C. oatmeal

1/2 C. Kerrygold butter or other pasture butter - unsalted

1/2 C. walnuts - chopped

butter for pan


Pre heat oven to 375 degrees


Butter 10" glass pie plate.  Pile apples into plate, sprinkle with juice, about 1/2 tsp. cinnamon, and a little bit of sugar, if you are using, saving some for the topping.

Combine flour, oats, a little more cinnamon, if you like, and sugar - if using.  Cut in butter til mixture is crumbly.  Stir in nuts.  Sprinkle flour mixture evenly over apples.

Bake at 375 degrees for 45 minutes.


Note 1:  this crisp is even tastier and healthier if you toss a few frozen organic blueberries all around the apples.

Note 2:  a few raisins mixed in with the apples is very good, as well.

Note 2:  I have made this crisp with unpeeled peaches and blueberries - yum!
